Not for little monkeys

Now, let me start by saying the kids don’t like it, I am sick of it and SOH worships the oven it comes from. Every single time.
So in all fairness it should not be called banana bread but rather SOH’s All-time Favourite Snack. Try it and see for yourself which monkey in your household takes a shine to it.

Banana bread

Ingredients

100 gr almond meal
30 gr coconut fibre flour
2 large ripe bananas, mashed
3 large eggs
2 tbsp soft coconut oil
1 or 2 tbsp coconut sugar (depending on the sweet tooth involved)
10 gr baking powder
5 gr vanilla sugar
1 tsp cardamom
A pinch of sea-salt

a regular sized silicone cake tin
preheated oven to 175 ºC

Preparation

Combine eggs, soft coconut oil, spices, bananas and sugars. Whisk until creamy. Combine the dry ingredients and add them to the wet mixture and stir together.
Pour batter into cake tin and give it a little shake to distribute mixture evenly. Bake in the oven for roughly 30-40 minutes. This ‘bread’ is quite moist, more of a cake really, so if you like it on the dry side, cover with tin foil and bake for however longer you deem necessary.
