Minus the cow that is. Although you could actually add some. Chicken, nuts or feta cheese are also really nice additions. But I usually just eat this ‘as is’ with plenty of ground chili.
Ingredients
Renders about 800-900 grams of vegetables, 2 days’ worth of a main course for me but could also just be a side dish for 4 persons
1 eggplant
1 courgette (or zucchini if you are American)
2 red bell peppers or pointed peppers
about 200 gr of assorted mushrooms such as shiitake, oyster mushroom or chestnut mushroom
olive oil
salt
black pepper
dried thyme, dill and tarragon
plenty of ground chili if you like it spicy
Preparation
– chop up all the ingredients, not too big and not too small
– heat olive oil in a big wok
– toss in the vegetables and stir fry untill it softens up and browns a little
– add spices and herbs to taste
– all done!
