Quinoa Salad with Lime Basil Dressing

Ingredients:

2 cups quinoa, cooked

1 cup blueberries

3 medium avocados, diced

1 cup pecans, toasted

For the dressing:

1 tbsp olive oil, extra virgin

1 tbsp maple syrup

juice of 2 small limes

a handful of fresh basil, finely chopped

seasalt

ground black pepper

Preparation:

1 in a large bowl add quinoa, blueberries and avocados.

2 Toast pecans in skillet on low – medium heat for roughly 5 minutes. Keep an eye on them!

3 Add pecans to other ingredients.

4 In a small bowl, whisk together ingredients for the dressing, pour over salad and gently stir.

Refrigerate and serve cold.
